COUNTRY RICE SALAD 
DRESSING:

1/2 c. mayonnaise
1/4 c. prepared mustard
2 tbsp. sugar
1 tsp. vinegar
1/4 tsp. salt
1/8 tsp. pepper
1-2 tbsp. milk, if necessary

SALAD:

3 c. cooked rice, chilled
1/4 c. sweet pickle relish
1 jar (2 oz.) pimento, chopped, drained
1/3 c. green onions, chopped finely
1/4 c. green pepper, chopped, finely
1/4 c. celery, chopped, finely
3 hard cooked eggs, diced
Fresh parsley
Cherry tomatoes

Combine all dressing ingredients except milk or cream. Set aside. In a large salad bowl, combine all salad ingredients. Pour dressing over rice mixture; stir gently. Add milk if mixture is dry. Chill several hours before serving. Garnish with parsley and cherry tomatoes. 10 servings.
