OLD FASHIONED APPLE DUMPLINGS 
1 package pie crust mix
3/4 teaspoon cinnamon
4 medium tart apples
1 tablespoon butter
1/3 cup sugar

Syrup:

1 1/4 cups boiling water
1/4 teaspoon cinnamon
Apple peels
3 tablespoons lemon juice
2 tablespoons sugar
1 tablespoon grated lemon peel
3 tablespoons butter

Pour boiling water on apple peels; simmer, covered for 20 minutes. Drain. Discard peels. Combine hot liquid with remaining ingredients; stir to dissolve sugar.

Roll pastry 1/8 inch thick; cut into 4 (7 inch) squares. Pare and core apples (save peels for syrup). Place apple in center of each square; combine sugar and cinnamon. Fill centers of apples; dot with butter. Bring 2 ends up to top of apple; fold over. Fold ends as for a package. Seal with tines of fork. Prick top with fork. Place in baking dish. Chill while making syrup.

Pour syrup into baking dish around apples. Brush dumplings with slightly beaten egg white; sprinkle with sugar.

Bake at 375°F for 40 minutes, or until apples are tender. Serve warm with hard sauce.
