OYSTER ROCKERFELLER CASSEROLE | |
1 qt. raw oysters 1/4 lb. butter 1 stalk celery, finely chopped 1 medium onion, finely chopped 1/2 c. chopped parsley 1 pkg. frozen spinach 1/4 tsp. aniseed 1/4 c. Worcestershire sauce 1/2 c. soft bread crumbs salt, pepper, cayenne to taste 1 c. grated Parmesan Preheat oven to 450°F. Grease 9 x 13 casserole. Drain oysters and arrange in single layer on bottom of dish. Melt butter and sauté celery and onion until soft. Add parsley, spinach, aniseed, Worcestershire, bread crumbs, salt, and pepper. Spread this mixture over oysters and bake for 30 minutes. Remove and if necessary, pour off water. Sprinkle with cheese and a very thin layer of bread crumbs and bake another 10 minutes or until browned. Serves 6. |
