GUMBO 
1/2 c. flour
1/2 c. oil
1 bunch green onions
1 bell pepper
1 bunch celery
1 white onion
Garlic to taste
Water (about 4 c.)
Salt
Pepper (red pepper is best)
1 stewed chicken, deboned, all you want
1 pkg. smoked sausage, all you want

Cook a pot of rice.

Mix oil and flour in a large skillet and brown to a dark chocolate brown, a roux sauce. Chop vegetables, saute in butter and add to roux. Add water slowly while stirring. Add chicken and sausage (you may use seafood such as shrimp) and salt and pepper to taste.

Add rice to gumbo and serve in bowls or pour gumbo over rice as individual servings.
