SHRIMP GUMBO 
1 lb. shrimp (fresh or frozen) shelled and deveined
1 tbsp. butter
1 med. onion, sliced
2 (1 lb.) cans stewed tomatoes
1 pkg. frozen okra
Cayenne pepper
1/4 tsp. black pepper
1/4 tsp. thyme

Rice

Cook shrimp in boiling salted water until pink (3 to 5 minutes). DO NOT OVERCOOK.

Melt butter in large saucepan; add onion and saute about 5 minutes.

Add remaining ingredients - cook 7 to 10 minutes or until okra is tender.

Just before serving, add shrimp.

Serve over hot rice.
