GREEN BEANS WITH SOUR CREAM
SAUCE
 
1 1/2 lbs. string beans
Boiling salted water
1/2 c. chopped onion
1 1/2 tbsp. butter
1 1/2 tbsp. all-purpose flour
3/4 c. chicken broth
1 1/2 tsp. vinegar
1 1/2 tsp. dried dill
Dash of salt & black pepper
1/2 c. sour cream
1/2 c. sliced water chestnuts
2 tsp. each of minced parsley & slivered pimento

Wash, trim and cut beans diagonally into 2 inch lengths. Cook in salted boiling water for 10 to 15 minutes. Drain well. Saute onion in melted butter until tender. Stir in flour and cook 2 more minutes or a little longer.

Blend in broth slowly, stirring and cook until thickened. Add vinegar, dill, salt and pepper. Mix in green beans, sour cream and water chestnuts. Heat slowly. Transfer to serving platter. Sprinkle with parsley and pimento for garnish. Delicious with broiled salmon filet. Serves 4 to 6.
