CAULIFLOWER CASSEROLE 
1 head cauliflower
3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1 tsp. salt
Dash of pepper
1 tbsp. parsley flakes
4 hard cooked eggs
2 tbsp. butter
1/2 c. cracker crumbs

Separate cauliflower and cook in salt water until tender. Drain.

Melt 3 tablespoon butter into saucepan; stir in flour, add milk and cook, stirring constantly until mixture comes to a boil and thickens. Remove from heat and stir in salt and pepper and parsley.

Combine cauliflower, eggs, sauce and pour into 1 1/2 quart casserole. Sprinkle crumbs with butter over top. Bake at 350 degrees for 25 minutes.
