NORWEGIAN PANCAKES 
3 eggs
1 1/2 c. milk
1/2 c. cream
1/2 c. melted butter
1 c. sifted flour
1 tbsp. sugar

Beat eggs until creamy. Add the milk and cream. Beat until well blended. Sift dry ingredients and add to mixture. Fry on hot skillet, covering bottom of skillet with dough. Fry as regular pancakes. When done serve hot with jelly or sugar. Fold corners.
