SWEDISH RICE PUDDING 
1 c. uncooked rice
1 c. water
1 tsp. salt
2 tbsp. butter
4 c. milk
1 cinnamon stick
1 c. light cream (can use whole milk)
2 tbsp. sugar
1 tsp. vanilla
1 whole blanched almond

Combine first 4 ingredients in heavy saucepan. Heat to boiling; cover and cook 10 minutes. Stir in milk, cinnamon stick. Cover and cook over low heat about 45 minutes or until rice is tender, stirring occasionally.

Remove cinnamon stick. Add cream, sugar, vanilla, and almond. Pour into hot serving dish. Serve with warm milk, sugar and cinnamon. Raisins may be added to taste. Serves 6 people.
