SWEET POTATO BREAD 
3 1/2 c. flour
3 c. sugar
1 1/2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
2/3 c. water
2 c. mashed sweet potatoes
1 c. cooking oil
4 eggs, beaten
1 c. raisins
1 c. pecans, chopped

In a large mixing bowl combine the flour, sugar, baking powder, soda, salt, nutmeg and cinnamon. In a separate bowl combine water, oil, eggs and mashed potatoes. Add to dry ingredients and blend well. Stir in raisins and pecans. Pour into 2 greased and floured 9 x 5 x 3 inch pans. Bake at 350 degrees for 1 hour or until done.

Yield: 2 loaves.

MUFFINS:

Bake in 2-inch muffin pans for 20 to 25 minutes.
