SIMPLE STACKED ENCHILADAS | |
2 lbs. ground beef or hamburger meat 1 lg. bag grated cheese 1 chopped white onion 1/2 c. chopped jalapenos (optional) 1/2 chopped bell pepper (green and red) 1/2 head shredded lettuce 1 lg. tomato, chopped 1 (30) pkg. corn tortillas 1/2 c. cooking oil 1 pkg. taco seasoning mix 1 can tomato soup 1 sm. can tomato sauce Heat oven to 450 degrees. In a large skillet, brown meat and 1/2 cup of the onions, 1/4 of the chopped bell pepper, and 1/2 of the taco seasoning. In a saucepan, heat soup and tomato sauce and remainder of taco seasoning. In another large skillet, heat the tortillas in small amount of cooking oil until they are limber, but not limp. Line aluminum foil in a large casserole dish, layer tortillas on bottom and pile on meat and cheese, add another layer and then place in oven until cheese is melted. Remove from oven and garnish with lettuce, tomatoes, onion, and peppers. More cheese and sauce as you desired. |
