PEANUT BRITTLE | |
2 c. white sugar 1 c. white syrup 1/2 c. water 12 oz. Sathers Raw Spanish Peanuts 2 tbsp. butter 2 tsp. vanilla 1 1/2 tsp. baking soda 1/2 tsp. salt Cook sugar, syrup, water and salt in a heavy kettle until mixture spins a thread and then add 12 ounces of raw Spanish peanuts. Boil slowly until mixture is very golden yellow - almost brown and the smell is like roasting peanuts. Take off stove and add 2 tablespoons butter, 2 teaspoons vanilla and 1 1/2 teaspoon baking soda. Stir until butter melts and pour onto 2 greased cookie sheets. When cool break into pieces. |
