SKILLET ENCHILADAS 
1 lb. hamburger meat
1 med. onion, chopped
1 can cream of chicken soup
1 can Rotel tomatoes
1 (10 oz.) pkg. Cheddar cheese
8 oz. sour cream
4 oz. can green chile peppers, chopped
10 to 12 flour tortillas

Brown meat and half the onion in electric skillet. Add soup and Rotel tomatoes. Simmer 10 minutes. Grate the cheese and save 1 cup for later. Soften tortillas in microwave.

To each tortilla, spread 1 tablespoon sour cream, some chopped onion, green chiles and cheese. Chopped black olives may also be added. Roll and place seam down in meat sauce. Top with remaining cheese and simmer until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
