CHICKEN-CASHEW CASSEROLE 
2 c. cubed, cooked chicken
2 c. thinly sliced celery
1/2 c. cashews
1/2 tsp. salt
2 tsp. grated onion
2 tsp. lemon juice
1 c. mayonnaise
1 sm. can mushrooms, drained
1/2 c. grated American cheese
1 c. crushed potato chips

Toss chicken with all ingredients except cheese and potato chips. Place in casserole. Sprinkle cheese and potato chips on top. Bake at 450 degrees for 10 to 20 minutes. Yield: 6 servings.
