ZUCCHINI RELISH | |
7-8 med. zucchini 4 lg. onions 3 lg. stalks celery 3 c. sugar 3 c. cider vinegar 2 1/2 tsp. celery seed 2 1/2 tsp. mustard seed 2 1/2 tsp. turmeric Cut zucchini, onions, and celery into 1/4 inch diced pieces. Add 1/2 cup pickling salt. Stand overnight. Drain and rinse under cold water. Combine rest of ingredients. Bring liquid to a boil and simmer for 2 minutes. Add vegetables and remove from heat and let stand for 2 hours. Return liquid to a boil and simmer mixture for 5 minutes. Remove kettle from heat. Spoon relish into sterilized jars and seal. Process in hot water bath for 25-30 minutes. Makes 4-6 pints. |
