HEAVENLY WALNUT SQUARES | |
2 c. flour plus 1/4 c. flour 1/2 c. sugar 1/2 c. cornstarch 1/2 lb. butter 2 1/4 c. brown sugar 4 eggs 2 tsp. baking powder 1 tbsp. vanilla 4 c. chopped walnuts 2 1/2 c. flaked or shredded coconut Cream together sugar and butter. Add cornstarch and 2 cups flour, mixing well. Knead into dough and press into three 8 x 8 inch pans. Bake at 300 degrees for 10 minutes. In the meantime, mix together the eggs and the brown sugar, add 1/4 cup flour and baking powder; beat well. Then stir in vanilla, walnuts and coconut. Spread over the baked dough. Bake at 300 degrees for 15 minutes, increase heat to 350 degrees and bake 5 minutes longer. Cool. Then frost with topping. TOPPING: 1 lb. powdered sugar 1 cube butter 1 (8 oz.) pkg. cream cheese 1 tbsp. vanilla Cream butter. Add vanilla and softened cream cheese. Beat until smooth. Add powdered sugar gradually, beating well. Spread over the baked layers. Makes very large recipe. Slice into small squares as it is very rich. Freezes well. |
