CREOLE CHICKEN AND RICE 
1 1/4 sticks butter
2 env. onion soup mix
1 uncooked fryer, cut for frying
2 c. rice, uncooked
8 c. water
Pepper

Melt butter in 4 quart baking dish. Add onion soup mix and mix well. Place chicken in a layer on top of mixture. Sprinkle on the rice; add water. Cover and bake at 350 degrees for 1 hour. Remove cover and brown. Unless you have a 4 quart casserole, I would advise you to halve this recipe and bake in two 2 quart casseroles. Serves 10 to 12.
