CREOLE PORK WITH RICE 
1 to 1 1/2 lbs. stir-fry pork
2 tbsp. vegetable oil
2 med. onions, chopped
2 tomatoes, chopped
1 med. green pepper, chopped
1 1/2 tbsp. flour
1 tsp. salt
1 1/4 tsp. chili powder
1 1/2 c. water

Brown the pork well on both sides in a skillet, keeping the heat moderate. Then arrange in a shallow casserole. Put onion, tomato and green pepper over the meat in casserole. Add flour to drippings in the skillet. Add salt and chili powder, and blend. Add water and stir until mixture comes to a boil.

Pour over the pork and vegetables, cover the baking dish and bake in a 350 degree oven for about 45 minutes or until meat is tender. Serve over rice. This will make four servings. When liquid cooks down, add a little hot water, as needed.
