COLD RICE SALAD 
4 c. cooked rice
1 c. artichokes, sliced or cubed
1 tomato, sliced
1/2 c. pitted black olives
5 pitted lg. green olives
1 sm. onion, minced
3 oz. red peppers, roasted
1 clove garlic, minced
1/3 c. oil
1/6 c. wine vinegar
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. chopped parsley

Mix - serve cold. Serves 6.
