LIGHT AND CHEESY BROCCOLI
CASSEROLE
 
1 pkg. frozen chopped broccoli, thawed and drained
1 c. sour cream
1 c. cottage cheese
1/2 c. Bisquick baking mix
1/4 c. butter, melted
2 eggs
1/4 c. grated Parmesan cheese

Grease lightly square baking dish. Spread broccoli in dish. Beat sour cream, cottage cheese, Bisquick mix, butter, and eggs with hand mixer 1 minute. Pour over broccoli. Sprinkle with Parmesan cheese.

Preheat oven to 350 degrees. Bake until golden brown and knife inserted halfway between center and edge comes out clean, about 30 minutes. Cool for 5 minutes.
