CHEESY BROCCOLI CASSEROLE | |
1 1/2 lb. fresh broccoli 2 slightly beaten eggs 3/4 c. cottage cheese 1/2 c. shredded Cheddar cheese 2 tbsp. finely chopped onions 1 tsp. Worcestershire sauce 1/4 tsp. salt 1/8 tsp. pepper 1/4 c. fine bread crumbs 1 tbsp. butter, melted Cut broccoli stalks into spears. Cook covered in a small amount of boiling water about 10 minutes or until crisp-tender. Drain well and put aside. In mixing bowl combine eggs, cottage cheese, Cheddar cheese, onions, Worcestershire sauce, salt and pepper. Arrange broccoli spears in a baking dish. Spoon cheese mixture over it. Stir together bread crumbs and butter. Sprinkle over cheese mixture. Bake uncovered for 10 or 20 minutes in a 350 degree oven. Serve immediately. Serving for 6. |
