"PERFECT EVERY TIME" COCA-COLA
CAKE
 
1 can Coca-Cola (not diet)
1/2 c. buttermilk
1 c. (2 sticks) butter
1 3/4 c. sugar (white granulated)
2 large eggs, lightly beaten
2 tsp. vanilla extract
2 c. all-purpose flour
1/4 c. cocoa
1 tsp. baking soda, sifted
1 1/2 c. miniature marshmallows
1 stick butter
3 tbsp. cocoa
1 tbsp. vanilla extract
1 (16 oz.) pkg. powdered sugar
pecans (optional)

Combine 1 cup Coca-Cola and buttermilk and set aside. Beat 1 cup SOFTENED butter at low speed with an electric mixer until creamy. Gradually add granulated sugar; beat until blended. Add eggs and 2 teaspoons vanilla. Beat at low speed until blended. Combine flour, 1/4 cup cocoa and soda in a separate bowl. Add to butter mixture alternately with cola mixture. Begin and end with the flour. Beat at low speed just until blended. Stir in marshmallows. Pour batter into a greased and floured 13 x 9-inch baking dish.

Bake at 350°F for 30 to 35 minutes or until wooden pick inserted into center is clean. Remove from oven; cool 10 minutes. Pour Coca-Cola Frosting over warm cake. Garnish with chopped pecans, if desired.

Frosting: Bring 1 stick butter, 1/3 cup Coca-Cola and 3 tablespoons cocoa to a boil in a large saucepan over medium heat, stirring until butter melts. Remove from heat. Whisk in SIFTED powdered sugar and 1 tablespoon vanilla. Pour over warm cake. Sprinkle pecans on top if desired.
