EASY PECAN PRALINES | |
2 c. white granulated sugar 2/3 c. light brown sugar 2 c. pecans, chopped 1 c. homogenized milk 1 stick butter, softened 2 tbsp. white corn syrup Dash of salt Mix all ingredients. Bring to boil. Reduce to low fire when it bubbles. Cook about 12 minutes. Remove from heat and beat until it thickens. It will lose its shiny look. Drop by tablespoonfuls on waxed paper. Makes 20-24. |

They are REALLY YUMMY!
We did use a candy thermometer and tested by dropping a little into cold water, for soft ball stage.
It took a bit longer to cook then it specifies here. Probably twice the cook time. Be patient!
If you drop them when you think it's getting harder to stir, they will spread out more than if you keep stirring to a thicker stage, which is what we did. At that point you can scoop them with a tiny cookie scoop and they will hold their shape more like little balls of praline.
They remind me so much of See's butterscotch squares and I think would be DELISH if you dipped them in chocolate! Mmm!
