BEST EVER MUFFINS 
1 3/4 c. sifted flour
2 1/2 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1 well beaten egg
3/4 c. milk
1/3 c. salad oil

Sift dry ingredients into mixing bowl and make a well in center. Combine egg and milk and add salad oil to egg mixture. Add all at once to dry ingredients. Stir (with large spoon) quickly ONLY until dry ingredients are moistened. (This is the secret of making good muffins.)

Drop batter into greased muffin pans; fill 2/3 full. Bake in hot oven, 400 degrees, for 25 minutes. Makes 1 dozen.

VARIATIONS: Add grated cheese (about 1/4 cup) to dry ingredients. Top batter in each muffin pan with 1 teaspoon jelly before baking.
