SPANISH POTATO SALAD 
10 lg. potatoes
1 cucumber
1 bell pepper
2 tomatoes
3 lg. eggs, hard-cooked (optional)
1/2 c. vinegar
3/4 c. olive oil
Salt to taste

Cut the potatoes into large chunks and cook until just barely done and drain well. Cut cucumber, pepper and tomatoes into large chunks. Combine all these with hot potatoes in large bowl with a lid. Add vinegar and olive oil. Depending on taste and amount of potatoes, you may need to add more of one or the other. Add salt to taste and let sit. The longer it sits, the better it is.
