APPLE DUMPLINGS 
6 med. cooking apples
3/4 c. sugar
1 tbsp. cinnamon

Pare and slice apples, mix sugar and cinnamon into them.

CRUST:

2 1/2 c. flour
1 c. shortening
1 tsp. salt
1 egg
1/4 c. cold water
1 tbsp. vinegar

Sift flour and salt together and cut into shortening into it until it resembled coarse cornmeal. Beat egg with vinegar and water. Add to flour mixture. Roll half the dough as for pie crust and cut into squares. Place a spoonful of apples on each, gather the crust and press it together at the top. Bake in 13 x 9 inch pan at 375 degrees until brown, about 30-40 minutes. Serve warm or cold with sauce.

SAUCE:

1 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
2 c. water
1 tsp. lemon extract or 1/4 tsp. nutmeg

For sauce - combine dry ingredients, add small amounts of water, stirring until smooth. Add remaining water and cook over medium heat until it starts to thicken, stirring constantly. Reduce heat and cook until clear, stir in flavoring. Serve warm or cold. 8 servings.
