PUMPKIN OAT PUDDING | |
1 1/4 c. Quaker Oats (quick or old fashioned), uncooked 3 c. evaporated milk 1 lb. 13 oz. can pumpkin (slid pack) 1 c. (4 lg.) eggs, slightly beaten 1 1/2 c. sugar 2 tsp. cinnamon 1 tsp. salt 1 tsp. ginger 1/2 tsp. ground cloves 3/4 c. pecans, chopped (optional) Blend ingredients on low speed. Pour mixture into a greased 12 x 10 x 2 inch half steamtable pan. Bake, until a knife inserted comes out clean, at 350 degrees for 1 hour. Serve warm with whipped topping. |
