CHOCOLATE MOUSSE | |
12 oz. chocolate bar (milk chocolate or semi-sweet or 1/2 of each) 2/3 c. milk 1/2 tsp. lemon juice 2 c. whipping cream 4 egg whites Heat milk and blend in small pieces of chocolate. Stir with a wooden spoon until all chocolate is completely melted, set aside to cool; whip the cream until stiff, set aside. Beat egg whites and lemon juice until peaks form. Fold the whipped cream into the chocolate, mix gently. Add the egg whites, folding gently to prevent a heavy texture. Spoon into individual dishes and chill. To serve, prepare additional whipped cream to top mousse and ganrish with shaved chocolate. 6-8 servings. |
