CHICKEN TAMALE PIE 
1 lg. chicken
2 lg. onions, chopped
1/2 c. butter
1/4 c. flour
2 1/2 c. canned or fresh tomatoes
3/4 c. pitted ripe olives
1 1/2 tsp. salt
1 1/2 tsp. chili powder
1 tsp. pepper

Simmer chicken in water until tender. Remove skin and bones and cut chicken into large pieces. In a large skillet, saute onions in butter until tender, about 10 minutes. Stir in the flour. Add the rest of the ingredients except the chicken and cook until slightly thickened. Arrange chicken in a buttered 9"x13" glass baking dish. Cover with sauce and cool. (Can be refrigerated at this point.) One hour before serving time cover chicken with batter and bake at 350 degrees for 1 hour.

TAMALE BATTER:

1 c. flour
1 c. yellow cornmeal
1 c. melted butter
2 tsp. baking powder
1 tsp. salt
2 1/2 c. milk

Mix all ingredients together and pour over chicken. Batter can be mixed in blender put milk in first). Batter will be thin.
