MEXICAN CHICKEN 
1 chicken
1 onion
1 can mushroom soup
1/2 can Rotel
1/2 lb. Velveeta cheese
1 bag Doritos
1 can Cream of Chicken soup

Boil chicken. Debone. Put in bottom of baking dish. Cut up onion and put on top of the chicken. Slice cheese and place on top of mixture. Top off with 1/2 bag of crushed Doritos. Mix together soups and Rotel and pour over the Doritos. Bake at 350 degrees for 30 minutes. After this time remove and top with remaining Doritos and bake 5 more minutes.
