BAKED BEANS | |
1 lb. dry Idaho Northern or Soldier Beans 1/2 to 1 lb. salt pork, cut up 1 tsp. dry mustard 1/2 tsp. dry ginger 1 med. onion, chopped 1 c. white sugar 1/4 to 1/2 c. maple syrup Cover beans with water and soak overnight. Drain and rinse. Cover with fresh water and bring to a boil. Boil until skins split when gently blown on, about 15 minutes. Drain beans, saving the cooking liquid. Place salt pork in bottom of bean pot. Add beans, then rest of the ingredients. Add conserved cooking liquid to cover beans. Do not stir. Cover bean pot. Bake at 275 degrees for 8 to 9 hours. (Add water only if beans look dried out.) |
