TOP O' THE MORNING MUFFINS | |
1 (6 oz.) can frozen orange juice 1 can hot water 2 c. 100% bran cereal 2 c. whole wheat flour 2 tsp. baking soda 1 egg white, beaten 1/2 c. raisins 1/2 c. dates Grated peel and pulp from one med. orange 1. In mixing bowl combine cereal, orange juice, water; add orange peel and pulp. 2. Add flour and soda. Mix on low speed. 3. Fold in egg white, raisins, dates. 4. Pour in muffin pan and bake for 16-18 minute. 5. Yields 12 large muffins. |
