STRUDEL 
4 heaping c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. vegetable oil
2 eggs
1/4 c. warm water
1 c. sugar
Juice from 1/2 lemon
1 tsp. vanilla

Mix flour, baking powder and salt. Combine and mix thoroughly with remaining ingredients and knead until smooth (about 5 minutes). Divide into 5 equal parts.

FILLINGS:

1 lg. jar strawberry jam
1 sm. jar apricot jam
1 lg. apple, shredded
Juice of 1/2 lemon
1 c. sugar
2 tsp. cinnamon
1 c. walnuts

Combine jams, apple and lemon juice; set aside. In another bowl combine sugar and cinnamon; mix well. Add walnuts.

Grease and flour large oblong pan. Preheat oven to 375 degrees. Roll out 1 part of dough on floured board. Curl around rolling pin and place in pan. Cut excess dough so it fits bottom of pan. Sprinkle sugar-walnut mixture (about 1/3). Roll out another part of dough and place on top of first layer. Trim excess dough. Add a generous amount of apple-jam mixture (about half). Repeat these 2 layers ending with sugar walnut mixture.

Using sharp knife, cut streudel into squares. Bake about 1 hour until top is golden brown. Remove from oven and let cool. Cut into squares and remove from pan.
