SPINACH CASSEROLE 
1/4 lb. butter
2 (10 oz.) pkg. chopped spinach
1 (4 oz.) can artichoke hearts, chopped
1/2 c. chopped onions
1 pt. sour cream
1/2 c. grated Parmesan cheese
Pinch of salt & pepper

Cook spinach as instructed on package. Drain well. Saute onions in butter. Stir into spinach, add artichokes and sour cream, salt and pepper. Pour into casserole, sprinkle with Parmesan cheese. Bake for 30 minutes in 350 degree oven.
