ALABAMA SQUASH CASSEROLE 
4 c. coarsely chopped, cooked yellow squash
2 tsp. instant minced onion
3 tbsp. melted butter, divided
3 eggs, well beaten
Salt and pepper to taste
1 c. milk
1 1/2 c. dry bread crumbs

Combine squash with onion, 1 tablespoon butter, eggs, salt and pepper. Blend well. Pour milk over 1 cup of bread crumbs and set aside for a few minutes. Then, add to squash mixture and blend. Spoon into lightly greased small casserole dish.

Combine remaining 1/2 cup bread crumbs and 2 tablespoons butter. Spread over squash mixture. Bake at 350 degrees for 30 minutes.
