2 c. sugar 1 c. buttermilk 1 tsp. baking soda 1 tsp. vanilla 1/4 tsp. butter flavoring 2 c. chopped pecans 2 tbsp. butter Mix soda and buttermilk. Then add sugar and dissolve. Use a large and deep saucepan and boil slowly to soft ball stage, 234 degrees (236 degrees if damp weather). Mixture turns brown as it cooks, but needs stirring constantly. Remove from fire and add flavorings, butter, and pecans. Stir until it begins to look like it is ready to sugar or cream. Drop in small patties onto waxed paper. Makes about 30-32 patties. |
