ZUCCHINI CASSEROLE 
6 c. thin sliced zucchini
1/2 - 1 c. chopped onion
1/2 c. butter
1 c. sour cream
1 c. shredded raw carrots
1 (6 oz.) pkg. Stove Top dressing mix
1 (10 oz.) can cream of chicken soup

Saute zucchini and onions in butter for 5 minutes. Add soup, carrots and sour cream. Simmer while preparing dressing mix according to the package. Place 1/2 the dressing mix in a buttered pan then add the zucchini and spread the remaining dressing mix on top. Bake at 350 degrees for 35 minutes (until bubbly).
