POPPY SEED MUFFINS 
3 c. flour
2 1/4 c. sugar
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 c. oil
1 1/2 c. milk
3 eggs
1/2 tsp. almond extract
1 1/2 tbsp. poppy seeds or more

Grease muffin tins. Combine flour, sugar, baking powder, and salt. Whisk oil, milk, eggs and extract until smooth. Add dry ingredients only until evenly moistened. Stir in poppy seeds. Bake at 350 degrees for 30 minutes or until golden brown. Makes 2 dozen.
