LA SAUCE POTATO 
4 c. diced potatoes
1/2 c. diced ham
1/2 c. chopped celery
1/2 c. chopped onion
2 tbsp. butter and parsley
Salt and pepper

Melt butter in saucepan. Saute celery, onion and ham until vegetables are tender. Add 2 cups of potatoes and 1/2 cup water. Bring to boil and reduce to simmer. Cook 30 minutes, stirring occasionally. (Let potatoes break up.) Add remaining potatoes and parsley. Return water to original level. Simmer 15 minutes or until potatoes are tender. Salt and pepper to taste. Serves 8.
