BREAKFAST CASSEROLE 
1/2 lb. French bread crusts, trimmed, cut into 1-inch cubes
2 lbs. pork sausage
16 eggs, beaten to blend
1 1/2 c. med. sharp cheddar cheese, shredded
Snipped fresh chives

Lightly grease a 9 x 13 inch ovenproof glass baking dish. Arrange bread cubes evenly in bottom of dish. Brown sausage in heavy skillet, stirring frequently and breaking up with spoon. Drain grease. Sprinkle sausage over bread, using a slotted spoon. Pour eggs over sausage. Top with cheese and chives.

Cover with foil and refrigerate overnight. Preheat oven to 350 degrees. Remove foil and bake casserole about 30 to 35 minutes until eggs are set. Cool 5 minutes and serve hot.
