BLACK - EYED PEA CASSEROLE 
1 med. onion, chopped
2 tbsp. bacon dripping or oil
1 can undrained plain black eyed peas
1 can undrained jalapeno black eyed peas
1 can stewed tomatoes
1 1/2 c. cooked rice

Salt and pepper to taste. Saute the onion in bacon drippings. Stir in other ingredients and mix well. Top with grated cheese. Bake about 30 minutes at 350 degrees.
