MAX'S BURRITOS | |
1 pkg. beef chorizo 3 lbs. ground round 18 eggs 2 cans (8 oz.) diced chilies 2 extra large cans refried beans 2 lbs. jack cheese, cubed 4 doz. regular size flour tortillas Brown chorizo and ground beef and drain well. Add 6 beaten eggs at a time to meat mixture. Add chilies to meat and eggs. Add beans, clean cans with 1/2 cup hot water and add to mixture. Add cubed jack cheese. Cook about 15 minutes. Heat tortillas on hot griddle. Add filling and roll up. Serve to a crowd with favorite salsa or wrap in foil or plastic freezer wrap to serve as needed. |
