PINTO BEANS 
2 lbs. pinto beans
Several chunks salt pork
6 cloves garlic, chopped
2 tsp. oregano
8 to 9 chili pequins, mashed
2 tbsp. salt

Do not soak beans. Fill large bean pot or Dutch oven 1/2 full with water. Bring beans to boil and simmer uncovered 1 hour. Add several chunks of salt pork and simmer for another hour. Add oregano, chile pequins and simmer for another hour. Add salt and cook 1 hour more.
