CHICKEN CURRY 
1/4 c. chopped onions
2 c. tart apples, unpeeled, chopped
1 tbsp. oil
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. ground ginger
1 tsp. curry powder
1 c. skim milk
1 1/2 c. cooked chicken, diced
1/4 c. raisins
2 c. rice, cooked unsalted

Cook onion and apple in oil until tender. Stir in flour, ginger, salt, curry powder. Add milk slowly, stirring constantly until thickened. Add chicken and raisins. Heat to serving temperature. Serve over rice. Serves 4.
