CHICKEN CURRY 
1/4 c. onion, chopped
2 c. tart apple, unpeeled, chopped
1 tbsp. oil
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. ground ginger
1 tsp. curry powder
1 c. skim milk
1 1/2 c. cooked chicken, diced
1/4 c. raisins
2 c. rice, cooked, unsalted

Cook onion and apple in oil until tender. Stir in flour, salt, ginger and curry powder. Add milk slowly, stirring constantly; cook until thickened. Add chicken and raisins. Heat to serving temperature. Serve over cooked rice. 4 servings.
