CHICKEN MELON SALAD 
2 c. diced cooked chicken
3 tbsp. sliced green onion
2 tbsp. raisins
Lime Curry Dressing (see recipe)
1 c. honeydew melon balls
1 c. cantaloupe balls
3 tbsp. toasted sliced almonds
2 c. chilled cooked rice
Lime wedges

In large bowl combine chicken, green onions, rice and raisins. Pour 2/3 cup Lime Curry Dressing over chicken mixture. Toss lightly. Chill 1-2 hours. Just before serving, stir in melon balls and almonds. Garnish with lime wedges. Pass remaining dressing separately. Makes 4 main dish servings.

LIME CURRY DRESSING:

3/4 c. mayonniase
6 tbsp. lime juice (about 3 limes)
1 1/2 tsp. grated lime peel
1 1/2 tsp. curry powder
1 tsp. salt
1/4 tsp. pepper

Mix ingredients thoroughly. Makes 1 cup.
