PANSY - MELON SALAD 
1/4 c. vegetable oil
2 tbsp. lemon juice
1/2 tsp. sugar
1/4 tsp. salt
Dash of fresh ground pepper
3 c. (3/4 inch) melon pieces (honeydew, cantaloupe, and watermelon)
2 sm. cucumbers, thin sliced
Assorted salad greens
Pansy flower tops

Mix oil, lemon juice, sugar, salt, and pepper in tightly covered container and toss with melon and cucumber. Cover and refrigerate up to 8 hours. Drain; toss with salad greens and edible flower tops - pansies.
