PEACH, APPLE, PLUM, BLUEBERRY
CAKE
 
1 stick butter, softened
1 scant c. sugar
2 eggs
1 tsp. orange or lemon peel
1 tsp. vanilla and a dash of almond flavoring
1 c. flour, unsifted
1 tsp. baking powder
Pinch of salt

Beat together butter and sugar until light and fluffy. Add 2 eggs, orange or lemon peel and vanilla and a dash of almond flavoring. Continue beating until well blended and fluffy. Mix together flour, baking powder and salt. Add to batter and mix just until blended, no more. Spoon batter into 9 x 9 inch well-greased pan. Slice fruit (3 or 4 peaches; 3 or 4 apples; 5 plums; blueberries) and lay on top of batter, preferably stuck in at an angle with top part in the air.

Mix 1 tablespoon sugar with a little butter and make a sort of paste. Spread on top of entire cake. Bake in 350 degree oven for 50 to 60 minutes. Toothpick comes out clean when done. Remove from oven and sprinkle with confectioners or powdered sugar.
