MANDARIN SALAD 
1 head iceberg lettuce
1 pkg. spinach (pinch off stalks)
4 stalks celery, sliced
1 can sliced water chestnuts
1 to 2 cans mandarin oranges
Toasted almonds

To toast almonds: Melt butter on cookie sheet, toss almonds, bake at 350 degrees until golden.

Toss lettuce, spinach leaves, celery, oranges and water chestnuts. Add toasted almonds. Pour on dressing.

DRESSING:

1/2 c. oil
1/4 c. tarragon vinegar
1/4 c. sugar
Dash of Tabasco sauce
