CREPES SUZETTE 
1 1/2 c. flour
1 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 c. milk
2 eggs
1/2 tsp. vanilla
2 tbsp. butter, melted

Measure first 4 ingredients. Stir in remaining ingredients and beat well until smooth.

Lightly butter grill or skillet and heat until butter bubbles. Pour 1/4 cup batter into skillet and spread thin with a spoon or rotate pan. Cook until light brown then turn and brown other side. Spread with orange sauce and roll up.

ORANGE SAUCE:

1/2 c. butter (softened)
1 c. sugar
4 tbsp. orange juice
1 tbsp. orange rind

Grate 1 orange for rind. Then squeeze juice from orange to make 4 tablespoons. Cream butter and sugar and add the juice and rind. Mix well.

Variations: Make crepes and top with any of the following and roll up: Applesauce, sweetened strawberries, jelly or jam.
